I posting this here so that others might learn from you advise to me.

When at camp, you talked about custom grinding your wedges. When seeing my wedge, you also mentioned that you'd have someone grind my 56* wedge if you were me.

I've found a club fitter/maker that will do the grinding. He would meet with me and he'll grind it to my wishes. ($75 and hour and should take an hour to adjust a wedge or two). I have Callaway X wedge with 56* w/13* bounce. I have matching 52*/11* and 60*/11*.

I'd like to be able to use my 56* and 60* with more confidence from the fairway. For some reason I feel pretty confident with the 52* from tight lies and the fairway. I am not really worried about the bounce in the sand since I'll open the face to achieve the bounce I need. I also play a lot of harder sand so less bounce might be nice.

What should I want the grinder to do with my 56* wedge? Less bounce? Grind a narrower sole?

You might take a look at the grind profile on the Cleveland 588 DSG wedges to see if you like that. Most of the grinding I've seen on wedges is to reduce bounce on the two corners, or else to reduce bounce overall. You might need that bounce in bunkers though, so that's something to consider. I play a low-bounce 60* and a normal bounce 56 DSG. From the fairway, I just make sure my hands are leading the clubhead and the bounce doesn't affect the shot.

If you do have them ground, you'll need to add weight to the head (or hosel) to compensate.
